The Canary limpet is an endemic mollusk from the coasts of the islands, the best known being “the black limpet”. It is important to respect the closed periods that you can consult at the following link: Closed dates for the capture of limpets. Limpets must be purchased at fishmongers.
CANARIAN LAPA INGREDIENTS WITH GREEN MOJO
15 or 20 barnacles
2 cloves of garlic
fresh parsley
coarse sea salt
50g of extra virgin olive oil
white wine
PREPARATION OF LAPA WITH GREEN MOJO
Wash the limpets very well so that no trace of sand remains and drain.
MOJO
In a large pestle, place the peeled and chopped garlic. A pinch of coarse salt and parsley (some people do it with coriander or add the typical Canarian mojo). We smash everything. Continue adding a splash of olive oil and a splash of white wine at will.
GRIDDLE
It is put on the grill or in a pan. Add the mojo over the limpets.
