CHRISTMAS RECIPE ANGEL HAIR TROUTS
Trout are very typical in Canarian houses during Christmas time. Although the most traditional is the sweet potato, we wanted to bring the angel hair.
Inocencia Santana Gonzalez teaches us this recipe and tells us that as a child, her mother made that angel hair and they ate it with bread or spoonfuls. Today the family delights us at Christmas with the typical traditional trout. They can be made fried or baked. Ours is baked.
INGREDIENTS
1 Angel Hair Pumpkin
Water
1 egg yolk
800 grams of sugar for each kilo of pumpkin, peeled and cut
a pinch of salt
large patty wafers
powdered sugar
a cinnamon stickPREPARATION
The dough of the trout is what is used to make the dumplings. You can make them yourself or buy them made. Although homemade they will be a little richer and if you get fresh dough you will save time.
The pumpkin is cut into four parts and we peel it very carefully. The rind of this pumpkin is especially hard since after harvesting it, it must be left for between six and twelve months to ripen in a place without much light and ventilated. Once peeled, we remove the seeds and cut it into large squares.
In a cauldron we put the water with the cinnamon and a pinch of salt. Add the pumpkin and put everything over medium high heat. Boil for half an hour until soft and drain very well. Now we pass it to a tray where we are slicing it with a fork to remove the strands.
Then we return it to a cauldron over low heat together with the sugar and we do not stop stirring slowly until it takes on a golden hue.
Once we have this, we let it cool down and we take out the empanadilla wafers to fill them.
In a cold tray we are putting the dough and filling in little piles with the angel hair in the center. We fold carefully joining the edges with a fork and paint them with the whipped yolk. When we have the hondilla full we put them in the oven before preheating to 180º. Once they are golden brown, we take them out and sprinkle with the icing sugar.
Let cool to serve on a beautiful Christmas tray. This will be the best Christmas dessert with your favorite nougat.
